I have a 1998 Yamaha 30hp two-stroke outboard that I am using to power my 14' mercury quicksilver inflatable.
I am looking for input and people's opinions as to what pitch, diameter, blade #, brand propeller I should have on my outboard for best performance.

You should start by installing a induction Hardline or TT tach to know your achieved max top rpm with you alone & boat lighty loaded. That way will know is factory delivered prop is spot on for that size sib and be able to play with +,- prop pitches to optimize boat/engine revs. Get factory min-max wot parameters to check.

lightly loaded wot rpm and gps speed will tell how your present prop works and if you setup works.
