It would seem to me that if one of the foils hit something in the water, the ride would get real interesting really fast.

The issue with this strange water craft is that there's huge water splash at back engine when boat is on its way fully lifted out of water. Seems that electric engine is missing a lower water deflector plate on lower unit, or at least one properly height match with respect to passsing water flow. Water drag against lower back engine will be increased at full throttle consequently reducing top speed.

As we have seeen, it's not a matter to sit any engine at back transom to power a given boat and voila, you need to perfectly height seat it for top combo performance.
