Best to use small batches. Gelcoat really needs full catalyst to cure properly and I know of nothing you can add to prolong cure. There are inhibiters in it from the manufacturer and they could make a slow cure gelcoat if someone wanted it but most likely wouldn't do it for under a drum batch size.
