Back again for some more input...
Buddy's boat, 1993 Cape Craft, 21' Center Console, 200HP V-6 Mercury w/T&T...
Looking to convert to Hydraulic Steering...
Been pricing a couple of brands and 600-800 seems like a doable range for a complete kit with pump, hoses, hardware and cylinder...
From past experience, what are your recommendations; Which have you used?, Installation tips/tricks?, Maintenance Woes or Worries?, Issues?

I have had the SeaStar kit on one of my boats and have driven others with the same setup. It is reliable and works well and I would highly recommend it. I have never installed one from scratch so I can't help there.
