Does anyone have a recommendation for a plywood alternative for non-structural (i.e. interior panels) applications? I'm aware of Penske board. Is there anything else out there? My main goal here would be weight reduction.

Use thin plywood and waterproof it. If you use penske board it is thicker then normal and the most significant weight loss will be to your wallet. Are you building a race boat? The weight difference will not make a difference in an interior panel for any regular boat.

^ this. They sell it right here at iboats now too. It's pricey, but looks good and lasts forever.

Ah, I looked (quickly) on iBoats and didn't find it. Would have linked here if I could have. Maybe you could give a link?

Google "coosa". It is a fiberglass sandwich used for transom cores instead of plywood. Strong and never rots.
