I have a 1998 30 hp yamaha w/3 cylinders. It will idle fine but in the water when you start going after a few minutes it starts sputtering and I'm not sure but acts like it's missing or running out of gas. Then if I idle it back down and go slow for 5 or 10 minutes it'll work fine again at high rpms for another 2 or 3 minutes. Fuel tank and hose are new.

Try pumping the fuel ball while this is happening if it gets better probabaly the fuel pump. I am assuming it's a carbed 2 strk

It's a 2 stroke with carbs. They were supposedly just cleaned. I've tried pumping the bulb it doesn't help.

find the frequently asked questions part of the forum and look up testing the fuel system if you know that it is not overheating and spark it still there to all plugs when this happens

Clean/rebuild carb with carb cleaner and compressed air, buy a rebuild kit with all new gaskets, including the gasket between the carb and carb adaptor.
Replace all fuel filters.
A compression test never hurts.
Check spark on all plug wires, with a Lisle 50850 spark checker.
