So my temp gauge is intermittent. with little rhyme or reason, the gauge will jump to pegged high. Laser temp shows that the engine is not running hot, and I get no alarms. I tried pulling the plug at the thermostat, but that is apparently not the one that goes to the gauge. I've seen some suggestions online that it is near the intake manifold, but apparently that is not specific enough for me.

I think the thermostat temp sender is the right one. Could be a bad gauge, or a bad ground. Check for clean connections on both. Both are fairly cheap to replace. Dave-R

On the older engines (non Vortec) the temp sender is on the forward right side of the intake as you face it, it may be hidden under a riser hose. Some of the newer Volvo engines may have it in the thermostat housing. Usually has a brown wire attached.
