Never installed one but I did work on a pair of three cylinder 'Rudes with temp gauges installed. The gauges were after market and were held in contact with the head by a clamp that used one of the water cover bolts. They were slow to react but accurate.

I have a 1990 175GT and with both a temperature alarm and a working water pressure gauge I have never felt the need for a temp gauge but it might be nice to have if stuck stats would cause it to be running coldl.

Yes you can add temp senders -- one on each head. You then add a switch that allows you select left or right head. You cannot monitor both at the same time unless you add two gauges. You essentially end up with cylinder head temperature gauges instead of water temperature but they are close enough anyway that the difference is a thin layer of metal (the head).
