it looks like you are way too high. with the AV plate level with the keel it should be 1-2 inches above the keel. also when getting out of the hole, the motor needs to be trimmed all the way down, then trimmed out. the farther out, the harder to steer and more air.

One problem you have is that your transducer is mounted to deep. it will displace the the water flow to your prop causing just the problem you are having. Having the engine set that high is not a problem if you have a prop ment for that height. However with a boat that long setting the engine lower will give you more control over the boats performance and handling. The one inch setting like tashasdaddy said will work best for your setup.
The AV plate isn't parallel so it's hard to say what the actual X dimension is. If the motor is a 200 HO it should have a Lightning gearcase which will allow for some increase. And you havent mentioned what prop or hull you have. It doesn't appear there is any setback.
For some props it may indeed be too high. For others, it may be too low.
Install a hydraulic jack plate/ power lift. You will have the best of both worlds. Raise it up for flat out performance and lower it for better stability and handling. Probelm solved
