I have a well worn 4.3-4bbl in a 20' Four Winns, deep vee hull 21* deadrise at the transom. It does well but properly propped, you're not going to get much over 40 mph. That doesn't bother me as the sea conditions here rarely allow you to go faster anyway.
Test drive the boat the way you'd usually be running it. The only way to know.
The V8 does have a good bit more torque than the V6 does.....
