I've noticed a slight amount of steam coming from the engine exhaust when running on plane. As far as I know, it's always been there, but I wanted to ask the experts here. I have a 7.4L Merc with a Bravo 3, and it doesn't have a full exhaust bellows. I don't know exactly what it's called, but it's the type where two halves of exhaust duct fit together when the outdrive is down (but they don't fit tightly together).
I decided to film the outdrive and stern while underway with my GoPro. Here are links to youtube. Have a look and tell me if you think the steam from my exhaust is excessive.
