Mercury 8hp 2005 4 stroke thermostat question. 60 vs 71 degrees

Hello everyone,
I am doing a complete maintenance on my "new to me"
2005 Mercury 8hp 4 stroke. I looked at the parts catalog for my
Serial and it gives two choices for a thermostat, 60 degrees and 71 degrees. The 60 is standard and much cheaper than the 71 ,but I am very interested to learning the difference or benefits of them both. Can someone explain the difference and benefits? Thank you very much in advance!

T/stats rarely go bad.
