2004 mercury 50hp 2 stroke / 2004 tracker v16

im going to look for different opinions regarding motor placement on a tracker pro v16 deep vee aluminum fishng boat where the motor cavitation plate is setup 2" above the bottom of the hull, im new to fishing boats, tracs dealer set it up that way 2 owners ago, i took it for its 1st run and the trim control and steering are barely active, i believe the cav plate needs all the water available for performance, the merc on the other hand also cant stand a partial trim at slow shallow speed from what seems to be high carb float levels, causing stalling. im not really sure what this setup could perform at, and with a 75hp obligation, im curious what more i could get, id like to hear comparable owners justify experiences, 2 or four stroke. my running condition was with 3 males at 600 lbs, 20 mph wind chop, top speed at 24 mph 5100 rpm, i dont know for sure about gauge accuracy, prop not perfect with 13 pitch. if i missed anything ill add it in, and thanks for any responses.
