1987 150 XR2 engine temperature

I'm brand new to this boat(all boats really) and I've noticed if I run it at 4000+RPM that the temp gauge rises fairly quickly to 3/4. At cruising speeds it is at half and when putting around it is around a 1/4. I didn't run it too long (2 min or so) at WOT as I didn't like the temp so high. It has a new water pump. Also if the boat is trimmed all the way out (3/4 on gauge) and running it hard it is difficult to steer. (does have a whale tail) It does not however make a rooster tail which I thought it should. Any help is greatly appreciated

Temps are ok and forget the trim guage, trim by the seat of you pants(feel) and get rid of the tail....

Thank you, I will try with out the tail this weekend. I think the rear of the boat where engine mounts is negative. Would wedges or spacers??? work to give me more positive trim?
