I have a 87' Wellcraft 165 Alpha 1, with 4 buttons for trim/tilt on the remote control. My boat has two cylinders on the outdrive, non-power steering.

Can anyone tell me how these are to be operated?

I believe the arrangement (above) on the remote control handle. The remote is the kind you pull on the base of the handle inboard towards the passenger side to dis-engage the shift cable for starting purposes...

Which is for trailering versus which is for trimming when running on the water?

Thanks in advance...new to all of this.

Post a picture of your control so we know what you have?

Am at work right now...but will take a picture when I get home and try to post it here.

The trim button is used to operate the trim only from full down to up about 15? from full down.
Tilt raises the drive up all the way for trailering

It looks to me like the tilt buttons are for raising and lowering it for docking or for putting it on a trailer and the trim buttons are for adjusting it while driving it.
