Evinrude 200 hp, 1990, Foulng Plugs, Warning Buzzer sounding. Low Water Pressure?

Forgive a dumb question, Please, but why would you want to bypass this throttle lever thermostat system?
And forgive this long post, but I wanted to try to include as much info as I could.

Here's my problem:
On plane at WOT my water pressure at the dash gauge is only about 12 - 15#'s. At idle even lower, 6 to 8#'s! Pea hole streaming water good tho.. BUT it Scares me!

Other day while on plane at 3/4 throttle, 4000 rpm, buzzer sounded. Motor cut out & went to idle. Started missing, running rough!
(I think it was a fuel problem, water in gas as the right side tank was empty when I bought the boat & probably not been used in a while. SO I filled right side tank 1/2 full, 12 gal, and switched over to it after leaving dock on left tank), but it could have been temp.
No temp gauge, but I definitely want to add one, how?
I switched back over to left tank, motor cleared up, quit missing & went to running OK. BUT, I'm kinda scared to get too far from the dock NOW! Buddy had over choked it & fouled plugs. Pulled plugs, cleaned & she fired right up. Had NGK 6's, swapped plugs with Autolite 4093's i.e., 306, that's all I could get. Had to order Champions L78's! L86's nobody (Advance, O Rielly)stocked or even showed on computer!
Boat has an electric fuel pump & a water separator filter. I completely drained tank, removed fuel gauge & pumped out, filled 2/3's with new non-E 87 gas. Added HEET, isopril acohol, to get all water out during pump out. Pick up line screen clean, no dirt / trash in tank. Resealed threads. Removed water filter (merc 35 8028 93T), no water, cleaned & re-installed, got a new one ordered, WIX 33226,

1990 Evinrude 200 hp, E 200 STL CCM, don't think it's a "Ficht", power head has been changed, i.e., frame number (G 1742533) & freeze plug numbers (C 431798) different. Motor runs strong, 55 mph Gps, 5300 to 5500 RPM on 14 1/2 X 22 Raker, one (each blade) 3/16 air hole. Pad hieght 5" below very bottom of V in transom, 6" Jack Plate set @ 1.5 inches up. Cavitation plate about 1/2" below secondary par, about even with forward V in transom. Running 87 Octane NON-ethanol with Sea Foam & Pennzoil Ultra synthetic mixed @ 50:1. VRO removed of course.

My goal is RELIABILTY, I don't want to be stranded on a 70,000 acre Lake!

SO do I need to bypass or remove the throttle lever thermostat?

Change out the thermostats?

And how do I add a temperature gauge?
