What throttles can I use for my 165 Merc? Are they pretty universal? I cant seem to find this info, or I am not searching for it correctly. Are steering systems universal, other than cable or hydraulic? For example, will this work? Thank you.

For the most part, any rotary system will, some better than others. For example, your boat might be better off with a no feedback system. Read the descriptions and ask questions.

Same with the remote controls. What control do you have now?

I believe its a rotary cable, I don't see a power steering pump anywhere.

You don't have power steering. A no feedback system may be the better choice.

Stick your head under the dash and see if the steering wheel is connected to a long rack & pinion or a round rotary system.

definitely round, should i convert to power steering? I know power steering pumps are pretty cheap, how about the rest of it?

No - You don't need power steering.

Are you having steering problems?

Sorry, i was out of town this week. I would like power steering so i could eventually add an Octopus Type R autopilot, and i think you need power steering for that. They also have a hydraulic unit that is a little cheaper, so i might be able to convert to hydraulic.
