Finding, or even making a hole in a boat hull during a restoration isn't anything to get excited about because they're easy to fix... just make sure you find and fix all the holes in your boat before you close it up.

Finding a hole in your boat after you've restored it really sucks and that's when it's time to get excited.

You won't gain anything by waiting for the resin to become "tacky". Just go ahead and put the catalyzed resin on, then the CSM and make sure its all wetted out. For the transom use that wet CSM as the adhesive and put another wetted piece of plywood on top and clamp or put a lot of weight on it like a bunch of cement blocks or something. Do that on a flat surface, garage floors work well.. There is also a small window of time just as the resin gells when you can cut it easily areond the edges with a utility knife. Then after it cures there will be less grinding. In the business we called that "wet" trimming. Not actually wet of course, kind of rubbery.
