OK I have a 19' Keywest 1900 open fisherman an the steering is stiff, took the outboard off an steering still has tension, so I picked up a parts boat that I'm using the engine off if an the steering is very easy an noticed it has a tack an pinion steering set up. The cable itself will probably not be long enough cause the parts boat is only a 16' an mine is a 19'.

My question is it worth it to change out my current set up to this rack an pininion an just buy a long enough cable?

Do you have room for a rack & pinion? What type do you have now, R&P or rotary?

Cables aren't cheap. It might be better to pick up a complete new system, then everything is new. Look here - Boat Steering Systems

Yes I have room, I have the type currently where u feed the cable in an bolt it tight (rotary)? The r/p system on the other boat looks fairly new, no rust or any type of corossion.
